Tutug Oncom Rice




     






      - Ingredient :
                            - 2 clove of garlics
                            - 1and 1/2 centimeter of galingale ( kencur ), crushed
                            - Oncom ( fermanted cake made from soybean sediment ).
                            - Minced Scallions at sufficiently
                            - Minced Basil Leaf  at sufficiently
                            - Minced Brown Sugar, to taste
                            - Salt, to taste
                            -  3 portion of  hot  white rice

     - Directions :
                            1. Put Garlic, Galingale, Brown Sugar and Salt into a bowl, mixed      
                            2. Put Oncom into bowl, crushed it with the others just groats.
                            3. All mixed and after that saute at wok
                            4. Insert basil and scallions into wok  and mixed with others
                            5. Saute all ingredients until done and then mixed with white rice.
                            6. Wallaah..it's done. Have a nice try.

    Liwet Rice / Nasi Liwet


    - Ingredients :                           a. 350  grams of water
                               b. 650 grams of coconut milk
                               c. 400 grams of chicken meats
                               d. 2 pieces of bay leaf
                               e. 2 bars of lemongrass, pounded
                               f.  2 cm of galangal, pounded
                               g. 2 teaspoons of salt
                               h. 2 teaspoon of brown sugar
                               i.  5 pieces of red onion
                               j.  2 cloves  of garlic
                               k. 1/2 teaspoon of coriander seed powder
                               l.  2 pieces of candlenut
                               m. 4 eggs
                               n.  1.000 ml water
                               o. 1/2 tablespoon of salt
                               p. 5 pieces of guava leaf
                               q. 4 pieces of teakwood leaf
                               r.  2 pieces of bay leaf
                               s. 100 gr of egg white
                               t.  50 ml of thick coconut milk
                               u. 1/4 teaspoon of salt

        - Directions :
                              1. Boil rice in 650 ml of coconut milk, let it well cook in small fire
                              2. Blend all ingredients from letter i to l
                              3. Mix all ingredients from letter c to l until well cooked, take away
                                  the chicken meat and slice it into small pieces, then boil again
                                  for 5 minutes, take away chicken meat again then boil the rest
                                  of  ingredients until tick.
                              4. Boil all ingredients from letter m to r, then peel the eggs and
                                  boil again
                              5. Mix ingredients from s to u,steam it then cut into small pieces.
                              6. All ingredients have already been cooked and ready to serve.
                              7. Waallaah, it's done. Have a nice try.

    Sayur Asem

                                             




         - Ingredients :
                                - 1/4 cup raw peanuts
                                - 1/2 teaspoon dried shrimp paste, toasted
                                - 6 shallots, thinly sliced
                                - 1 clove garlic, thinly sliced
                                - 1 large red chili, seeded and sliced
                                - 4 thick slices galangal, bruised
                                - 2 fresh  salam leaves
                                - 4 cups light chicken / beef stock
                                - 7 ounces cabbage, minced
                                - 1 small zucchini / chayote, peeled and diced
                                - Three and half ounces long beans, cut in short lengths
                                - 3 tablespoons tamarind pulp, soaked in 1/2 cup warm water,
                                   squeezed and strained to obtain juice
                                - Minced brown sugar, to taste
                                - Salt, to taste
         - Directions :
                              1. Put the peanuts in a small saucepan with water toc over.Bring to
                                  the boil,reduce heat,and simmer10 minutes.Drain and put aside.
                              2. Put the shrimp paste into saucepan with the shallots, garlic, chili,
                                  galangal,  salam leaves, and  stock.  Bring to the boil, cover ,
                                  reduce heat, and simmer 5 minutes.
                              3. Add  peanuts and vegetables and return to the boil.Lower the
                                  heat, cover, and simmer until vegetables are cooked, 10 to15
                                  minutes.
                              4. Add the tamarind juice and simmer for about 1 minute. Add
                                  minced brown sugar and salt to taste; if you prefer a really sour
                                  soup, sugar will not be necessary.
                              5. Remove galangal and salam leaves,then put into a serving bowl
                              6. Waallaah It's done, have a nice try.
